Smashed Cucumber Salad

English cucumber2

garlic (finely crushed)2 cloves

seasoned rice vinegar2 tbsp

sesame oil1 tsp

soy sauce1 tsp

toasted sesame seeds2 tsp

white sugar1 tsp

1Wrap each English cucumber in plastic wrap to minimize splattering.English cucumber: 2

2Place on a work surface and pound with a flat object (like a meat pounder) until cucumbers crack and are slightly flattened.

3Remove from plastic.

4Cut cucumbers in half.

5Halve each side lengthwise.

6Slice into 1- to 1 1/2 -inch wide slices.

7Transfer to a strainer set over a bowl.

8Sprinkle cucumber with white sugar and kosher salt .white sugar: 1 tsp, kosher salt: 1/2 tbsp

9Mix until well combined.

10Refrigerate bowl and strainer for ⏱️ 30-60 minutes so cucumber pieces can drain into the bowl.
